RECIPE TIPS

  • Making your own balsamic reduction is super simple. It also keeps well in the refrigerator for up to 2 weeks should you want to make it ahead of time or make a larger quantity for use in other recipes. 
  • If you are unsure of how long you need to keep your chicken breasts on the grill, test them by ensuring that they reach an internal temperature of 165℉. If you don’t already have one, make sure to get yourself a meat thermometer – it’s going to become your friend! 
  • Always use the freshest tomatoes, mozzarella and basil for this recipe – it makes a huge difference to the flavor of this dish if you use quality ingredients!
  • Try to use chicken breasts that are of equal size as this will ensure that they all cook at the same rate.
  • This recipe is perfect for serving to your family but you can also easily double the quantities if feeding more people. If your grill can’t fit 8 chicken breasts then you could grill them in batches till they reach an internal temperature of 155℉, transferring those that are done to a baking sheet, covered. When all chicken breasts are grilled, top them with mozzarella and bake them at 500℉ in the oven for 2-4 minutes or until the cheese has melted and they have reached an internal temperature of 165 . 

How to Make Grilled Caprese Chicken

  1. Season the chicken breast with 2 tablespoons balsamic vinegar, Italian seasoning, salt, and black pepper. Cover and allow to rest on the counter as the grill heats, no longer than 1 hour.chicken breast in a baking dish with seasoning
  2. Prepare the grill according to the manufacturer’s directions to burn at medium-high heat. 
  3. Place the chicken on the grill and cook, uncovered, for 5 to 8 minutes on each side depending on the thickness. Test the chicken for an internal temperature of 165 degrees.chicken breast on grill

  5. Meanwhile, place the remaining balsamic vinegar into a small saucepan with the brown sugar sweetener. Bring the mixture to a boil over medium-high heat and immediately reduce the temperature to medium-low, allowing the vinegar to reduce by half. The vinegar will thicken as it cools. If the mixture becomes too thick to spoon over the chicken, add 2 teaspoons of water and return to the heat, stirring until the mixture is mixed and begins to thicken again.

Ingredients
 

  • 4 boneless skinless chicken breasts, trimmed of excess fat
  • ½ cup plus 2 tablespoons balsamic vinegar divided
  • 1 tablespoon Italian seasoning

  • 4 to 6 leaves fresh basil chopped
