Recipe Notes:

  • It’s important to press excess liquid out of the pickles so that they can become crispy when baked. Press the pickles between layers of paper towels.
  • Always grate the cheese from a block of cheese instead of using pre-shredded cheese for best flavor and melting ability.
  • This recipe makes 12 pickle chips. You can easily double or triple this recipe to serve a larger crowd and bake the chips in batches.
  • Watch these cheese pickle chips for the last two minutes of the baking time as they can easily burn.
  • You will know when these cheesy pickle chips are done when they are lightly browned and crispy.
  • You can add a kick of heat to these pickle chips by adding some cayenne pepper, paprika, or red chili flakes to the recipe.
How should I store these Baked Pickle Chips?

Once completely cooled, store these cheesy baked pickle chips in an airtight container in the fridge for 2-3 days. These cheesy pickles can be reheated in the oven or in an air fryer, keeping a close watch that they don’t burn.

What cheese goes best with these pickles?

I’ve used sharp cheddar which pairs very well with the tangy flavor of pickles. Other types of cheese that can be used include: Swiss cheese, Pepper Jack, Provolone, or Gouda.

Turned out great! Dried my pickles 20-30mins prior to cooking. Didn’t need cooking spray, they come out super simple and easy clean. Going to try different cheese in the future just for giggles. It made my three year old do a double take, but she keeps coming back for more.
