Ham Tetrazzini

This rich and creamy Ham Tetrazzini is made with simple and inexpensive ingredients in a creamy sauce with al dente pasta, salty ham, and veggies.

Recipe Notes:

  • To reduce your salt intake, look for lean reduced-sodium ham.
  • You can use your favorite type of pasta in this dish although I have found that short pasta is the best. 
  • It’s good to cook the pasta only until al dente since it will continue to cook once the dish is transferred to the oven. 
  • I’ve topped the casserole with grated parmesan, but you could also use cheddar cheese or mozzarella. 
  • Consider swapping one cup of milk for a cup of evaporated milk to make your sauce more creamy and rich in texture. ½ a cup of sour cream added to the chicken broth will give a tangy flavor to the sauce as well.
  • Use white or yellow onions. Red onions are also an option, adding sweetness and color. 
  • I’ve used mushrooms, peas, and onions in this casserole, but you can use other veggies such as broccoli, cauliflower, diced carrots, and corn. 
  • Add a kick of heat to this dish by seasoning with crushed red pepper flakes or cayenne pepper. 
  • Garnish this ham tetrazzini with chopped parsley for a fresh flavor and attractive color, accompanied by a side salad and perhaps a bread of your choice.

Does this Ham Tetrazzini freeze well?

Yes, it does. You can freeze it for up to 3 months. Thaw it in the refrigerator before reheating it. Reheat in the oven or as single portions in the microwave.

How long can I store this casserole?

Store your leftovers in an airtight container in the refrigerator for up to 4 days. Reheat it in the oven at 350F for about 30 minutes or until it is really hot or in the microwave as single portions for 1-2 minutes.

What other meat can I use in this recipe?

Turkey is a good substitute for ham, as is chicken, tofu, tuna, and seitan. You can also combine ham with other meat such as chicken.

Can I make Ham Tetrazzini ahead of time?

Yes, you can. Follow the recipe as directed and transfer the ingredients to your casserole dish. Once cooled, cover the dish with plastic wrap and refrigerate it for up to 4 days.

  1. Melt 2 Tablespoons of butter in a large pot over medium heat.
  2. Once hot and melted, add the onions and cook until golden, about 4 minutes.butter and onions in pan

  4. Remove the onions and mushrooms to a small bowl.
  5. Meanwhile, prepare the pasta according to package directions.
  6. Place the remaining butter in the pot. Whisk the flour into the hot, melted butter to form a roux, then whisk in the milk. Season with salt, pepper and thyme and cook for 8 minutes until thickened.flour and milk and butter being mixed in pan

Ingredients
 

  • 4 Tablespoons Butter divided
  • 1 medium Onion diced
  • 1 cup Sliced Mushrooms
  • 1/4 cup All-Purpose Flour
  • 2 cups Milk
  • Salt and Pepper to taste
  • 1 teaspoon Thyme
  • 1/2 cup Chicken Broth
  • 8 oz Pasta approximately 2 1/2 cups
  • 1 cup Green Peas we used frozen
  • 2 cups Chopped Cooked Ham
  • 1/4 cup Grated Parmesan Cheese

Instructions
