Easy Samoa Brownies

These chocolate brownies are inspired by the popular Girl Scout cookie. They’re made with a rich and decadent chocolate brownie base, topped with caramel and toasted coconut topping with melted chocolate drizzle.

Enjoy these easy Samoa brownies with ice cream or whipped cream. 

Recipe Notes:

  • Use high-quality chocolate brownie mix and chocolate chips for the brownie batter and the chocolate drizzle. This will help create a richer and more decadent flavor.
  • Toasting the coconut flakes before adding them to the caramel to top the brownies will create a lovely nutty and toasted flavor.
  • Use a non-stick brownie pan when making these brownies, or line the pan with parchment paper.
  • Allow the brownies to cool completely before adding the caramel and coconut toppings. This will help the toppings adhere better to the brownies.
  • Once the toppings are added, chill the brownies in the refrigerator for at least an hour before cutting. This will make it easier to cut the brownies into clean and even squares.
  • When storing these brownies, line the bottom of the container with parchment paper to prevent the brownies from sticking to the container.

These Samoa brownies can be stored in an airtight container at room temperature for 2-3 days or refrigerated for up to one week. You also have the option to freeze these brownies for 2-3 months, flash-freezing them first to harden them before transferring them to a container or a Ziploc bag.

Samoa brownies can be enjoyed alone or alongside vanilla ice cream or whipped cream.

WHAT VARIATIONS CAN I MAKE TO THIS RECIPE?

  • To ensure these brownies are gluten-free, choose a gluten-free brownie mix. You also have the option of making your own brownie batter from scratch with gluten-free flour. 
  • I’ve used an ice cream caramel topping for these brownies, but you can use another good-quality caramel sauce or make your own.
  • You can also get creative with the toppings by adding additional ingredients, such as chopped nuts, chocolate chips, chocolate sprinkles, maraschino cherries, or mini marshmallows.

  1. Prepare and cook brownies according to package. brownie mix in a baking pan
  2. While the oven is still on, place the coconut on a parchment lined baking sheet. Toast the parchment in the oven until evenly browned, stirring often, for about 3 to 5 minutes. Remove the coconut from the oven and allow it to cool slightly.toasted coconut on a baking sheet

Easy Samoa Brownies

This Easy Samoa Brownies are inspired by the famous girl scout cookie. Made with a chocolate brownie base and topped with caramel and toasted coconut.

Ingredients
 

  • 18.4 oz boxed brownie mix cook according to the package directions
  • 2/3 cup vegetable oil used to prepare boxed brownies
  • 2 eggs used to prepare boxed brownies
  • 1/2 cup water used to prepare boxed brownies
  • 2 cups shredded coconut
  • 16 ounce bottle caramel ice cream topping
  • ½ cup semi sweet chocolate chips melted

Instructions

  • Prepare and cook brownies according to package.
  • While the oven is still on, place the coconut on a parchment lined baking sheet. Toast the parchment in the oven until evenly browned, stirring often, for about 3 to 5 minutes. Remove the coconut from the oven and allow it to cool slightly.
  • Add the caramel to the coconut and stir to combine.
  • Spoon the coconut mixture over the cooked brownies in an even layer.
  • Transfer the melted chocolate to a piping bag with the corner snipped. Drizzle the chocolate over the brownies.

Notes

The oil, eggs and water listed in the ingredients is what was needed to prepare my package of brownies. Your brownie mix might call for less or more. 
Based on what brownie mix you use, the amounts might change. DO NOT add extra egg, oil and water to recipe.
