Recipe Notes:

  • Make sure to use room-temperature flour tortillas so that they are softer and more pliable.
  • You can easily double this recipe if serving to a larger crowd.
  • Some delicious condiments to serve with your chicken quesadillas include sour cream, guacamole, salsa, and cheesy dip.
  • If you don’t like using melted butter to coat the parchment paper, use cooking spray instead.
  • The 8 flour tortillas will cover the entire sheet pan.
  • You can cook and shred your chicken specifically for this recipe or simply use some leftover shredded chicken or rotisserie chicken.
Can I freeze baked chicken quesadillas?

You can also store your baked quesadillas in the freezer for up to 2 months. I like to save space in my freezer by flash-freezing the quesadillas on the sheet pan and then transferring them to a Ziploc bag for storage. Defrost these in the refrigerator overnight and then reheat them in the microwave or oven when ready to enjoy them again.

How long can I store these in the refrigerator?

Store these chicken quesadillas (wrapped in plastic wrap) in an airtight container in the refrigerator for up to 3 days. Then reheat in the microwave or the oven.

How can I adapt these Baked Chicken Quesadillas?

Shredded turkey, pulled pork, or ground beef could be used instead of chicken.
Make vegetarian quesadillas by adding vegetables such as finely sliced red cabbage for extra crunch.
For spicy quesadillas, add some finely sliced jalapenos or cayenne pepper.
Use corn tortillas for gluten-free quesadillas.
