You can use either white rice or brown rice in this recipe. For an authentic chicken fried rice experience, try jasmine rice or long grain rice. To prevent mushy rice, it’s best to also use day old rice.
While the recipe calls for olive oil, you can also use vegetable oil, canola oil, or toasted sesame oil to achieve different flavors. Toasted sesame oil adds a rich, nutty flavor that’s common in Chinese food.
Variations:
- Make this dish vegetarian by omitting the chicken and increasing the amount of vegetables used. Including chopped pineapple pieces is another tasty addition especially if you’re looking for other non-meat ingredients.
- Create a low-carb version of this dish by using cauliflower rice instead of normal grain rice.
- Ditch the chicken and use pork (ground or a sauteed diced boneless pork chop), beef (ground or a sautéed diced steak), or seafood such as shrimp.
- I haven’t specified the type of rice used in this recipe. Feel free to use brown or white rice. You could even make use of quinoa for a chicken fried quinoa version.
Easy Chicken Fried Rice
- Cook rice according to package directions and set aside.
- Heat 1 tablespoon oil in large skillet over medium high heat. Cut chicken and season with salt and pepper.
- Cook chicken 4-5 minutes or until lightly browned and no pink remains. Remove from pan and set aside, keep warm.
- Add remaining 1 tablespoon oil to pan and heat. Add peas and carrots and cook 2-3 minutes until tender.
- Push the peas and carrots to the side of the pan and pour in the beaten eggs.
- Scramble eggs until completely cooked through. Add ginger and cook 1 minute. Mix eggs and vegetables together.
- Add cooked rice and chicken and stir to combine. Drizzle with soy sauce and sesame oil and continue cooking 2-3 minutes or until heated through.
- Garnish with green onions if you like and serve immediately.
