You can use either white rice or brown rice in this recipe. For an authentic chicken fried rice experience, try jasmine rice or long grain rice. To prevent mushy rice, it’s best to also use day old rice.

What kinds of oil can I use for this fried rice recipe?

While the recipe calls for olive oil, you can also use vegetable oil, canola oil, or toasted sesame oil to achieve different flavors. Toasted sesame oil adds a rich, nutty flavor that’s common in Chinese food.

Variations:

Easy Chicken Fried Rice

Ingredients
 

  • 2 tablespoon olive oil
  • 1 pound boneless skinless chicken breasts cut into bite size pieces
  • Salt and pepper to taste
  • ½ cup frozen carrots thawed
  • ½ cup frozen peas thawed
  • 1 teaspoon fresh ginger
  • 2 eggs lightly beaten
  • 3 cups cooked white or brown rice
  • 3 tablespoons soy sauce
  • 2 teaspoons sesame oil
  • Green onions sliced for garnish, optional

Instructions
