Easy Chicken Fried Rice

- 2 tablespoon olive oil
- 1 pound boneless skinless chicken breasts cut into bite size pieces
- Salt and pepper to taste
- ½ cup frozen carrots thawed
- ½ cup frozen peas thawed
- 1 teaspoon fresh ginger
- 2 eggs lightly beaten
- 3 cups cooked white or brown rice
- 3 tablespoons soy sauce
- 2 teaspoons sesame oil
- Green onions sliced for garnish, optional
Cook rice according to package directions and set aside.
Heat 1 tablespoon oil in large skillet over medium high heat. Cut chicken and season with salt and pepper.
Cook chicken 4-5 minutes or until lightly browned and no pink remains. Remove from pan and set aside, keep warm.
Add remaining 1 tablespoon oil to pan and heat. Add peas and carrots and cook 2-3 minutes until tender.
Push the peas and carrots to the side of the pan and pour in the beaten eggs.
Scramble eggs until completely cooked through. Add ginger and cook 1 minute. Mix eggs and vegetables together.
Add cooked rice and chicken and stir to combine. Drizzle with soy sauce and sesame oil and continue cooking 2-3 minutes or until heated through.
Garnish with green onions if you like and serve immediately.
