I just love how the mix of fruits and nuts gives a lovely contrast of crunchy savory and juicy sweetness to this salad. It’s certainly a very refreshing summer meal that can easily be made in double quantities for serving a crowd.

Recipe Notes:

  • Serve this salad as a side dish to main meals or use it as a filling for wraps, sandwiches, toasted croissants or lettuce cups.
  • Shredded chicken can be used instead. If you need to cut down on preparation time, consider using a rotisserie chicken. 
  • Feel free to add in extra fruit of your choice. Apricots add a delicious chewy and colorful element to this salad and strawberries are bright, cheerful and sweet. Use these in place of the grapes or as a delicious addition. 
Can I use anything else in place of mayonnaise?

Yes you can! Whether you just don’t like mayonnaise or want a low-fat alternative, yogurt is a great substitute for mayonnaise.
It really is a personal choice whether you use a full cup of mayonnaise or a full cup of yogurt or even mix half yogurt and half mayonnaise.

Greek yogurt is a lovely full cream substitute and if you have to factor in calories then opt for a fat free variety. Lactose free yogurts are wonderful to use for any friend or relative who suffers from dairy sensitivities. Yogurt definitely gives everything a much lighter feel and is not as rich and tangy as mayonnaise.

Another good alternative would be sour cream but it will lack that element of sweetness provided by the mayonnaise.

What are the best grapes to use for this salad?

Seedless grapes are the best to use for this salad recipe. However you can use green grapes or red grapes, depending on what is available to purchase or your preference.

If you want a colorful arrangement in your salad then use both red and green grapes.

Can I use different nuts?

Absolutely! Not everyone likes pecan nuts. Walnuts are a great option as are almonds, sliced or slivered. For anyone with a nut allergy you can use sunflower seeds instead. Just keep in mind that some people are as allergic to seeds as they are to nuts!

Ingredients
 

  • 6 cups cooked chicken deboned and coarsely chopped
  • 1 cup pecans coarsely chopped (optional)
  • 1 cup seedless grapes halved
  • 1 Granny Smith apple cored and diced
  • 2 stalks celery chopped
  • 1 cup mayonnaise
  • 2 tablespoons dijon mustard
  • 1 lemon juice only
  • ¼ teaspoon celery salt
  • ¼ teaspoon onion powder

Instructions

  • Stir all ingredients together until completely blended.
  • Refrigerate for at least two hours or until ready to serve.
