Recipe Notes:

  1. Season the chicken to your taste: The recipe mentions seasoning the chicken as desired. Feel free to add your favorite seasonings or herbs to enhance the flavor of the chicken. Common options include garlic powder, onion powder, paprika, or Italian seasoning.
  2. Use rotisserie chicken for convenience: Shredded rotisserie chicken works great for this recipe as it adds a depth of flavor and saves you time in the kitchen. However, you can also use leftover roasted chicken or cooked chicken breast.
  3. Experiment with cheese varieties: While the recipe suggests shredded cheddar cheese, you can get creative and try other cheese options like mozzarella, Monterey Jack, or a combination of different cheeses. The choice of cheese can add different flavors and melt beautifully on top of the cobbler.
  4. Let the casserole rest before serving: Allowing the casserole to rest for 10 to 15 minutes after baking allows the sauce to thicken, making it easier to serve. This step ensures that the cobbler retains its shape and flavors when serving individual portions.
ingredients for chicken cobbler
Can I use fresh vegetables instead of frozen peas and carrots?

Absolutely! While the recipe calls for frozen peas and carrots, you can use fresh vegetables if you prefer. Simply blanch or steam the vegetables until they are slightly tender before adding them to the casserole.

Can I use homemade biscuit dough instead of the Red Lobster Cheddar Bay biscuit mix?

Yes, you can substitute homemade biscuit dough if you prefer. Prepare your favorite biscuit dough recipe and drop spoonfuls of the dough on top of the casserole before baking. Adjust the cooking time accordingly.

Can I make this cobbler in advance and reheat it?

While the cobbler is best enjoyed fresh out of the oven, you can make it in advance and reheat it. After baking, let the casserole cool completely, cover it tightly, and refrigerate for up to 2 days. When ready to serve, reheat it in a preheated oven at 350 degrees Fahrenheit for 20-25 minutes or until heated through.

I found using the seafood flavored biscuit seasoning mix was too overpowering for a chicken dish. Next time I will use only half or less of it.
