Brownie Popsicles
Since summer started, we’ve been eating ice cream a lot. It’s the classic summer dessert, and of course we love it…but believe it or not, after a while, I actually started to get tired of it. (Crazy, right?) So, for a change of pace, I decided to come up with a new kind of summertime sweet. Popsicles are a classic summer treat, and brownies are a classic any time of year…so why not combine the two?
Turning brownies into popsicles is actually a lot easier than you’d think. You start by baking the brownies the normal way, then trim them into a popsicle shape. (What do you do with all the trimmed-off crumbs? Um…what crumbs? :-9)

Then, you just dip the popsicle-shaped brownies into melted chocolate – brown, white, or pink – and scatter sprinkles or jimmies on top. Pop them in the fridge, and let them chill until the chocolate sets. Then slip a popsicle stick in the un-dipped end, and your Brownie Popsicles are ready to enjoy.
These are great either for dessert, or for a snack when you’re just chillin’. (See what I did there?)
Brownie Popsicles
Ingredients
1 pkg. Fudge Brownies, prepared
Wilton Chocolate Melting Discs, White
Wilton Chocolate Melting Discs, Pink
Wilton Chocolate Melting Discs, Brown
Popsicle Sticks
Jimmies or Sprinkles
Directions
1. Cut out six popsicle shaped brownies. I made mine about 3 inches long and rounded the top edges.
2. Next, melt each chocolate color in the microwave. Heat each for 30 seconds at a time, and stir after each time until chocolate is completely melted. Dip brownies in the pink, white or milk chocolate, leaving the bottom ½ of the brownie uncovered.
3. Sprinkle the jimmies or sprinkles on each popsicle and let set until the chocolate is hard. Gently push a popsicle stick into each brownie at the end that you left with no chocolate.
