Breakfast Potatoes
- Preheat oven to 400 degrees F. Clean and chop potatoes and peppers. Add to large bowl and drizzle with olive oil.
- In a small bowl combine the salt, garlic powder, paprika, dried parsley and black pepper.
Sprinkle half of the seasonings over the potato mixture. - Stir to coat and sprinkle remaining seasonings, and stir again.
- Transfer the mixture to a baking sheet and bake for 20-30 minutes until fork tender and golden.
- Chop your cooked bacon and sprinkle over potatoes. Add fresh parsley if desired.
