Biscuit and Gravy Casserole

Looking for some breakfast comfort food? This Biscuit and Gravy Casserole is a strong contender to my Green Bean Casserole, and that’s saying a lot!

This casserole dish is loaded with super flavorful pork sausage, bits of buttery refrigerated biscuits, held together with a simple creamy gravy. It’s the perfect dish to wake up to for a hearty breakfast but can also be enjoyed for brunch or any meal of the day, really!

Recipe Notes:

  • You can create a better binding of the ingredients by adding 2 eggs to the milk, whisking until fully incorporated. This will help prevent any ‘crumbling’ and create a more cake-like stability to the casserole. 
  • If the gravy becomes too thick, add in 1 tablespoon of milk at a time to thin it out till it has reached the desired consistency. 
  • Add cheese on the top of the casserole before baking the final layer. It will give your dish a little extra indulgence!
Can I freeze this biscuit and gravy casserole?

Yes! This breakfast casserole can be stored (either as leftovers or made ahead of time) in the freezer for up to 2 months. Thaw overnight in the refrigerator and reheat or bake in the oven.

What variations can I make to biscuits and gravy casserole?

1. For a meatier casserole, add in some cooked bacon pieces or chopped ham.

2. For a vegetarian version of this dish, ditch the sausage and add in some mushrooms which will provide a hearty flavor and meaty texture to the casserole.

3. Make a cheesy gravy by including shredded cheese in the mix – preferably cheese that you grate from a block of cheese and a choice of cheese that melts well.

4. I’ve kept the seasoning very simple in this biscuit and gravy casserole. Feel free to include some of your favorite spices or seasoning as a way to adapt this dish.

  1. Preheat the oven to 350 degrees and spray a 9×13 baking dish with nonstick cooking spray. Spread half the biscuit pieces in the bottom of the pan in an even layer and bake in the oven for 15 minutes, until the biscuits are golden brown.biscuits cut up in pieces
  2. While the biscuits are baking, brown the sausage in a large skillet. When the sausage is cooked, transfer it to a paper towel-lined plate.sausage browning in a pan
  3. Place the butter in the pan with the sausage drippings and stir until the butter is melted. Add the flour and stir to mix. Cook until the mixture begins to bubble, stirring constantly.butter and flour in the pan with the sausage drippings
  4. When the flour mixture has thickened, add the milk and whisk to combine all the ingredients. Reduce heat to low and simmer until the gravy has thickened, stirring occasionally.white gravy in a pan

Ingredients
 

  • 16 oz refrigerated biscuits cut into bite-size pieces
  • 1 pound pork breakfast sausage
  • 2 tablespoons butter
  • 1/3 cup all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 4 cups milk

Instructions
