Cherry Bailey’s Mini Dessert is an easy trifle-like dessert made with broken pieces of chocolate chip cookies, sweet and tart cherry pie filling, whipped topping, cherries, and Bailey’s Irish Cream.
This creamy and boozy dessert is assembled in individual clear plastic cups for all the delicious dessert layers to be on display!
Recipe Notes:
- I’ve assembled these mini desserts in clear plastic cups. You could make a larger dessert and add it to a glass trifle bowl instead if you wish.
- I’ve used store-bought cherry pie filling for convenience, but you can make cherry pie filling from scratch for the best flavor if you have the time.
- Lining plastic cups with chocolate syrup is a delicious addition of chocolate flavor to these dessert cups. Cherry syrup is also a great option.
- If you don’t enjoy Bailey’s Irish Cream, consider a cherry liqueur instead.
- You can easily double this recipe if you’re serving to a crowd.
If you don’t enjoy alcohol in your food, use plain cream instead.
This dessert will keep well in the refrigerator for up to 2 days, but anything longer than that may make the chocolate chip cookies a little soggy and mushy due to the cream and other wet ingredients used.
When storing in the refrigerator, cover your dessert cups tightly with plastic wrap or store leftovers in an airtight container.

- Break up chocolate chip cookies and place in each cup.
- Scoop some cherry pie filling into each cup.
- Place about two cups whipped topping in a bowl. Mix in 1 oz. Bailey’s Irish cream into it. Place some of the mixture into each cup.
- Scoop more cherry pie filling and add a dab of whipped topping on top and a cherry.

- 4 cherries
