Baked Chicken Quesadillas
This Baked Chicken Quesadillas are made with yummy flour tortillas, brushed with melted butter, and loaded with a mixture of shredded chicken, gooey cheese, and tangy sour cream!
Enjoy these chicken quesadillas for lunch or dinner with guacamole, salsa, or cheese dip.
Recipe Notes:
- Make sure to use room-temperature flour tortillas so that they are softer and more pliable.
- You can easily double this recipe if serving to a larger crowd.
- Some delicious condiments to serve with your chicken quesadillas include sour cream, guacamole, salsa, and cheesy dip.
- If you don’t like using melted butter to coat the parchment paper, use cooking spray instead.
- The 8 flour tortillas will cover the entire sheet pan.
- You can cook and shred your chicken specifically for this recipe or simply use some leftover shredded chicken or rotisserie chicken.
You can also store your baked quesadillas in the freezer for up to 2 months. I like to save space in my freezer by flash-freezing the quesadillas on the sheet pan and then transferring them to a Ziploc bag for storage. Defrost these in the refrigerator overnight and then reheat them in the microwave or oven when ready to enjoy them again.
Store these chicken quesadillas (wrapped in plastic wrap) in an airtight container in the refrigerator for up to 3 days. Then reheat in the microwave or the oven.
Shredded turkey, pulled pork, or ground beef could be used instead of chicken.
Make vegetarian quesadillas by adding vegetables such as finely sliced red cabbage for extra crunch.
For spicy quesadillas, add some finely sliced jalapenos or cayenne pepper.
Use corn tortillas for gluten-free quesadillas.

Baked Chicken Quesadillas
- Preheat the oven to 400 degrees. Prepare a large baking sheet by lining it with parchment paper.
- Brush the parchment paper with half of the melted butter. Place tortillas over the baking sheet.
- In a large bowl, mix together the chicken, sour cream, taco seasoning, and 3 cups of cheese.
- Working on one half of each tortilla, add the chicken mixture placing a small sprinkle of cheese on top of the chicken.
- Fold the top half of each tortilla over the filled half.
- Brush the closed quesadillas with the remaining butter.
- Place in the oven and bake for approximately 20 minutes, flipping halfway, or until crisp and golden.
- These may be served with pica de gallo, guacamole, salsa. or sour cream for dipping.
