This Avocado Chicken Salad recipe is a creamy and tangy salad loaded with cooked chicken and a creamy dressing made from a mixture of fresh avocado, mayonnaise, and Dijon Mustard.

  • This avocado chicken salad is a perfect recipe for using up any leftover chicken. You could also easily use home-cooked shredded chicken for this salad too. 
  • You can easily adapt this avocado chicken salad by using leftover turkey instead. Since both are poultry, the substitution would be a good one, especially when trying to find creative ways to use up any remaining turkey meat from your Thanksgiving celebrations. 
  • You don’t have to chill this chicken salad, although it should be kept in the fridge before being served.

This avocado chicken salad can be stored in the refrigerator for up to 3 days in an airtight container.

If you wish to make it ahead of time, then I suggest that you prepare the individual components to be stored in separate containers till you intend to assemble and serve. This will keep your avocado chicken salad as fresh as possible and prevent it from becoming watery, which can sometimes happen when a creamy dressing base is added to other ingredients and sits in storage. That said, I do recommend making the avocado mayo dressing just before assembling the salad to serve – that way, the avocado won’t have already started to discolor from oxidation.

Ingredients Needed

  • Cooked Chicken – I like to use slow cooker chicken, instant pot chicken or rotisserie chicken
  • Avocados
  • Mayonnaise – to save on calories, use a low fat option. Or use half greek yogurt, halft mayo
  • Dijon Mustard – if you don’t have dijon mustard, any of your favorite mustards will work
  • Green Onion
  • Salt and Pepper


How to Make Avocado Chicken Salad

  1. Cut the avocados in half and remove the pits. Scoop out the flesh of the avocado using a spoon or avocado tool and place in a mixing bowl. Add the mayonnaise and dijon mustard and stir well to combine.avocado, mayo and mustard in a bowl

  • 2 Avocados
  • 2 Tablespoons Mayonnaise
  • 1 Tablespoon Dijon Mustard or less to taste
  • 1 Green Onion green part only
  • Salt and Pepper to taste

Instructions
