Avocado Chicken Salad
This Avocado Chicken Salad recipe is a creamy and tangy salad loaded with cooked chicken and a creamy dressing made from a mixture of fresh avocado, mayonnaise, and Dijon Mustard.
Serve this avocado chicken salad on crackers, rolls, or as a sandwich filling for an easy and delicious meal.
- This avocado chicken salad is a perfect recipe for using up any leftover chicken. You could also easily use home-cooked shredded chicken for this salad too.
- You can easily adapt this avocado chicken salad by using leftover turkey instead. Since both are poultry, the substitution would be a good one, especially when trying to find creative ways to use up any remaining turkey meat from your Thanksgiving celebrations.
- You don’t have to chill this chicken salad, although it should be kept in the fridge before being served.
This avocado chicken salad can be stored in the refrigerator for up to 3 days in an airtight container.
If you wish to make it ahead of time, then I suggest that you prepare the individual components to be stored in separate containers till you intend to assemble and serve. This will keep your avocado chicken salad as fresh as possible and prevent it from becoming watery, which can sometimes happen when a creamy dressing base is added to other ingredients and sits in storage. That said, I do recommend making the avocado mayo dressing just before assembling the salad to serve – that way, the avocado won’t have already started to discolor from oxidation.
