Strawberry Poptart Cookies
- Preheat oven to 350 degrees and line baking sheets with parchment paper.
Place butter, brown sugar, and granulated sugar in a stand mixer. Beat on medium-high
speed until light and fluffy, about 2 to 3 minutes. - Add the eggs and beat until blended. Add the vanilla and mix.
- Whisk flour, baking soda, and salt together in a medium bowl. Slowly, add flour to wet ingredients. Mix on medium speed for about 30 seconds, or until the flour has mixed in.
- Add in heavy cream and broken Poptart’s and stir.
- Chill cookie dough for 30 minutes.
- Place spoonful of cookie dough on a lined baking sheet. Bake in preheated oven for about 10-12 minutes.
- Transfer cookies to cooling rack until cooled completely.
