This dip has a pleasant kick of heat from the Ro-Tel tomatoes, and a generous amount of melted cheese mixed in with juicy sausage and finely chopped cilantro. 

Dig into this dip with crunchy tortilla chips or sliced vegetables.

Recipe Notes:

  • Velveeta cheese is a well-known processed cheese. You could certainly use another processed cheese that melts well without clumping. 
  • You can keep this dip for longer by leaving it in the slow cooker, and stirring the dip mixture every 10-15 minutes. 
  • Be careful when reheating this dip. When cheese is overheated it can quickly become grainy in nature…so even when reheating, remember to add some liquid such as milk.
  • To make a thinner dip, slowly add milk and stir until you achieve the desired consistency. 
What variations can I make to this dip?

1. Add a packet of taco seasoning to this dip to give it a taco flavor. Other great flavor additions include garlic and onion powder.
2. If the dip isn’t hot enough for your liking, add some cayenne pepper for an added kick of heat. Sliced jalapeno is also a great way to increase the overall heat of this dip.
3. Likewise, if you don’t enjoy any kick of spicy heat to your food, use a regular can of crushed tomatoes in this dip recipe instead of Ro-tel tomatoes.
4. Make this dip in a skillet instead of a slow cooker.

Yes, it can! Once made either store the dip in an airtight container or add it to a dipping bowl, covered tightly with plastic wrap, to be stored in the refrigerator for 1-2 days.

Dairy ingredients tend to lose their original texture when frozen so while you could technically freeze this creamy sausage dip, there is a risk of the dip getting a grainy texture.

  • 16 ounce roll bulk sausage cooked, crumbled, and drained well
  • 16 ounce block Velveeta cheese cubed
  • 8 ounce packages cream cheese cubed
  • 20 ounces Rotel tomatoes with chilies
  • 1 bunch fresh cilantro stems removed and finely chopped
  • Tortilla chips for serving

Instructions

  • Place all of the ingredients into a 4 quart slow cooker.
  • Cover and cook, stirring often, on low for 3 to 4 hours or until completely melted.
