This Instant Pot Lava Cake will satisfy any chocolate cravings you have as well as wow any guests that are lucky enough to partake in this show-stopping dessert! This lava cake definitely puts all other cakes to shame with its silky rich molten chocolate center, delivered to you hot out of the Instant Pot.

Instant Pot Lava Cakes

  1. In a large bowl, mix your chocolate chips and butter in the microwave. Warm them on high in the microwave at 30 second intervals, stirring between each time.stirring melted chocolate with a spatula
  2. To the large bowl, add in your powdered sugar. Mix well until incorporated.stirring in powdered sugar
  3. Add your eggs and egg yolk to the mixture. Mix well.
  4. Add in your vanilla and flour to the mixture. Mix well.stirring in eggs

  6. Add 1 cup of water to your instant pot. Place your trivet inside of the instant pot. Set 4 ramekins on the trivet. Close your instant pot by twisting the lid on and closing the valve.
  7. Set your Instant pot to high pressure for 9 minutes. It should take about five minutes to come to pressure. When the timer is complete, do a quick release on the instant pot by opening the valve by pulling it towards you. Make sure to open the valve with a hot pad or towel to protect from heat.
  8. Remove the ramekin from the instant pot with tongs or a towel. Transfer to a cooling rack. Continue to fill your ramekins with the mixture. Some water will have been cooked out from the bottom of the pot. I suggest removing the pot, dumping that water, and stealing your instant pot with one more cup of water to ensure that you have enough water for the next session.   9. You can eat this lava cakes straight out of the ramekin. Or you can place upside down on a plate and allow the cake to slide out from the dish. HOW LONG WILL LEFTOVER LAVA CAKES KEEP?

  • Firstly, I’d like to congratulate you if you are asking this question because clearly you have some serious self-restraint! Okay, on a serious note though, this is definitely the kind of dessert you want to eat straight from the Instant Pot to really enjoy that lava-y goodness so I recommend eating it right away.
    If you do want to store it though, then make sure to place it in an airtight container and store in the refrigerator for a couple of days. To reheat, pop it into the microwave for 10-20 seconds.

CAN THIS LAVA CAKE BE MADE AHEAD OF TIME?

  • You can make the lava cake batter ahead of time. Then store your batter in the refrigerator in a container with plastic wrap covering its top.
  • If you are wanting to save time, it’s much better to make the batter ahead of time than to make the entire lava cake ahead of time as reheating will continue the cooking process, lessening the lava centre which is not what you want.

TIPS FOR MAKING INSTANT POT LAVA CAKE

  • I used a larger Instant Pot model for this recipe that fits 4 ramekins on a layer. If you have a smaller model, then you could fit 3 on one layer and stack the 4th ramekin on top of the other 3. Be careful when removing them to avoid spillage.
  • Cooking times may vary according to the Instant Pot model you have. If you are not sure or are doing this for the first time, rather set the Instant Pot at 7 minutes instead of 9 and check whether the lava cake is underdone after the 7 minutes. If yes then set it for an additional 1-2 minutes.
