Honey Glazed Carrots

They are perfect for pairing with chicken, beef and seafood and can be ready to enjoy within 15 minutes.
Since I usually always have a bag of carrots sitting in my fridge, this recipe is an easy and tasty way to make use of and prepare this inexpensive and nutritious veggie. I slice the carrots and then let them simmer in a rich sauce of honey and butter until fork-tender, adding some brown sugar, garlic and seasoning for good measure.

TIPS FOR MAKING HONEY GLAZED CARROTS
- Leftover honey glazed carrots are excellent additions to hearty veggie-based soups or stews, so if you have any leftovers and aren’t quite sure what to do with them, give it a try.
- These honey glazed carrots are great to add to your regular midweek meals or weekend BBQs but are also fancy enough to be enjoyed at celebratory meals held throughout various holidays.
- You can use either full-sized carrots that have been cut into slices or pre-cut baby carrots (although these may take a bit longer to cook).
- Looking for a more elegant spin on this side dish? Try using rainbow-colored carrots to liven up your serving plate.
I haven’t prescribed what type of honey to use in this recipe so feel free to use whatever brand you are familiar with and have on hand. - Save some time by slicing your carrots up to 2 days before you use them. Otherwise, you could also purchase prepared carrot coins from your local grocery store.
Honey Glazed Carrots
- Over medium-high heat add olive oil and butter in a frying pan until butter is melted.
- Add carrots, brown sugar, honey and garlic to a frying pan and stir to combine.
- Cook for 8-10 minutes or until tender, tossing several times for even cooking. Add salt and pepper to taste.
- Garnish with fresh parsley and serve.
CAN YOU STORE HONEY GLAZED CARROTS IN THE REFRIGERATOR?
- Yes, you can. If you want to make these carrots in advance or you have some leftovers that you need to store then simply place them in a sealed container in your refrigerator. Since they will soften when chilled, it’s best to eat them within 2 days of storing.
- To heat your carrots, either place them in the microwave till heated or heat them in your oven, checking regularly to ensure that they don’t burn.
CAN YOU FREEZE GLAZED CARROTS?
- I don’t recommend freezing any kind of cooked carrots as they are likely to turn soft and mushy once thawed out.
