Recipe Notes:
- The best pan for this Giant Cookie Cake is one that is at least ½ inch deep. This will provide a suitable depth of cookie per slice, replicating a pizza slice and giving that soft and chewy interior with a crisp outer layer.
- Your giant cookie will expand while baking which is why you should leave ½’ spacing around the edges of the pizza pan.
- Feel free to customize this Cookie Cake with your own selection of toppings. I’ve chosen to add a delicious cream cheese frosting but you could add a chocolate drizzle, keep it plain and serve with a scoop of your favorite ice cream, or incorporate your favorite chocolate candy into the cookie dough such as M&Ms.
HOW SHOULD I STORE THIS GIANT COOKIE CAKE?
1. Store any leftover cookie cake slices in the refrigerator for up to 3 days when placed in an airtight container. You can also make your giant cookie pizza ahead of time and wrap it tightly in plastic wrap in the pizza pan, leaving any cream cheese topping just prior to serving.
2. Baked Giant Cookie Cake can also be stored in the freezer for 3 -4 weeks when stored in an airtight container or wrapped in plastic wrap in the pizza pan. Defrost at room temperature and add it to the oven to heat it if you prefer it served warm.
3. In both instances above, it’s important to first allow the baked giant cookie cake to completely cool prior to any storing as remaining heat will cause condensation which could result in your cookie cake becoming soggy.

Giant Cookie Cake
- Preheat oven to 350 degrees F. Lightly spray 12 inch round pizza pan with non-stick cooking spray or line it with parchment paper.
- In a large mixing bowl, cream together butter, brown sugar, milk and vanilla until smooth and fluffy.
- Add egg and beat until well combined.
- In a small bowl, whisk together flour, salt and baking soda. Add dry mixture to wet ingredients and mix until well combined.
- Stir in chocolate chips.
- Spread evenly into prepared pan leaving about ½ inch around the edge.
- Bake for 15-20 minutes or until edges are golden brown. Cool completely on wire rack.
For Optional Topping
- In a large bowl, beat the cream cheese until fluffy.
- Add powdered sugar and vanilla and beat until creamy
- Fold in whipped topping.
- Spread onto cooled cookie pizza.
- Add your favorite toppings
- Serve immediately.
- Store leftovers in airtight container in refrigerator.
