They say that breakfast is the most important meal of the day. Well, after trying these Fully Loaded Breakfast Burritos it’s certainly going to become your favorite meal of the day too!

All jokes aside, these breakfast burritos are seriously one of the tastiest breakfast and brunch recipes I’ve tried! They’re filled with breakfast-favorite foods such as sausage, eggs, hash browns, melted cheese and veggies. Of course, they’re also super versatile and quick to assemble.

Recipe Notes:

  • Reheat leftover burritos (or those made ahead of time) in the microwave for 1 minute on high with a damp paper towel covering, or reheat in a skillet on a medium low heat with a drizzle of olive oil, rotating your burritos and keeping a close watch that they don’t burn. 
  • Feeding a crowd for breakfast or a special brunch? Simply double the recipe ingredients!
Can I make these breakfast burritos ahead of time?

Yes, you can! Assemble these breakfast burritos and then wrap them tightly with aluminium foil. Store them in the refrigerator for 3-4 days or freeze them for up to a couple of weeks.

Reheat the stored burritos in the oven for 10-15 minutes at 350℉. If you opted to freeze your burritos, make sure to thaw them in the refrigerator overnight prior to reheating in the oven.

What variations can I make to this recipe?

Add in crispy pieces of bacon, slices of avocado or guacamole, corn, mushrooms or beans.

Add some heat to these breakfast burritos by using hot Italian sausage and include some sliced jalapenos, cayenne pepper, or red chili flakes into the burrito filling.

Crisp the tortillas till golden brown by heating them in a lightly coated pan for about 3 minutes on each side.

Make these breakfast burritos vegetarian by omitting the eggs and sausage and adding in extra veggies such as mushrooms and other fillers such as rice or beans.

  1. Heat oil in large skillet. Cook hash browns until golden brown, remove from pan onto paper towel lined plate. cooking potatoes in pan
  2. Add sausage, onion and peppers to the skillet and cook until no pink remains, drain if necessary.sausage, peppers and onion added to pan
  3. Add hash browns back to the pan with sausage.adding potatoes back to pan with beef
  4. In a small bowl, whisk eggs until lightly beaten. Pour into skillet and cook until set, stirring frequently. Add salt and pepper to taste .scrambled eggs added to pan
  5. Heat tortilla in microwave for 8-10 seconds to make it easier to roll.
  6. Spoon filling onto bottom ⅓ of each tortilla. placing meat and potato mixture on tortilla
  7. Sprinkle with cheese.cheese added to burrito

To reheat; place 1 burrito on a microwave safe plate or dish and cook for 2 minutes or until heated through. Fully Loaded Breakfast Burritos

Ingredients
 

  • 2 tablespoons canola or olive oil
  • 1 pound breakfast sausage
  • 1 ½ cups frozen cubed hash browns
  • ¼ cup yellow onion finely diced
  • ¼ cup green or red bell pepper or a combination, finely diced
  • 8 large eggs
  • Salt and pepper to taste
  • 1 cup cheddar cheese shredded
  • 1 cup Mexican or monterey jack cheese shredded
  • 8 flour tortillas

Serving options

  • Salsa
  • Picante sauce
  • Sour cream
  • Cilantro
  • Green onions

Instructions
