Cinnamon Bun Cookies recipe from The Rockstar Mommy

What happens when you combine a favorite breakfast treat with a cookie? Ta-da! Cinnamon Bun Cookies. They have the taste of a cinnamon roll with a chewy cookie texture.   These cookies are super simple to put together, and make an amazing cookie gift for the holidays.
So fire up the oven and lets get baking!

How to Make Cinnamon Bun Cookies

Ingredients:
1 cup unsalted butter, room temperature
3/4 cup white sugar
1 large egg, room temperature
2 teaspoons vanilla extract
2 and 1/4 cups all-purpose flour, plus more for rolling
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup brown sugar
2 Tablespoons cinnamon

  1. Place 3/4 cup butter and sugar in a large bowl and beat about 2 minutes. Add the egg and vanilla extract, and beat for 2 minutes. In a small bowl, whisk together the flour, baking powder and salt. Add half of the flour mixture to the sugar-butter mixture, combine, and then add the remaining half.Cinnamon Bun Cookies - dough ball on floured surface
  2. Flour a clean surface and roll out the dough to 1/2″ thickness, in the shape of a large rectangle. (You can do this in two batches, if desired.) Brush the remaining 1/4 cup of butter on the dough (you may use slightly less, but make sure all of the dough is buttered).Cinnamon Bun Cookies - rolling out cookie dough

  4. Sprinkle all over the cookie dough. Roll the cookie dough into a log, long end to long end. Refrigerate for 1 hour or overnight.Cinnamon Bun Cookies - sprinkling cinnamon sugar over dough
  5. Preheat oven to 350F and remove the cookie dough log from the fridge. Line two cookie sheets with parchment paper. Trim off the edges (about 2-3″) and discard. Slice the remaining dough into 1/4″ thick slices. Place the slices on a parchment paper-lined cookie sheet (or silicone mat-lined) at least 1″ apart.Cinnamon Bun Cookies - sliced cookies on baking sheet
