Recipe Notes:
- You can easily double this recipe if you have two casserole dishes and freeze one for later.
- Make your hashbrowns from scratch if you have time, or use frozen store-bought hash browns for convenience.
- If you want to reduce the fat content of this dish, use lean ground beef instead of regular ground beef. Ground sausage or pork can also be used in this chili cheese hash brown bake.
- Draining the meaty mixture well is an important step to prevent the casserole from becoming overly soggy and greasy.
- Sharp cheddar cheese is great in this chili cheese hash brown bake, but you can use another cheese. A Mexican cheese blend is great.
- This casserole can be assembled ahead of time and stored in the fridge for 2 days or in the freezer for 2 months. Adjust the baking time to account for the chilled ingredients.
This recipe has a slightly spicy flavor from the can of chili with beans. That said, you can easily adjust the level of heat in this dish by selecting a brand of canned chili with beans with a spicier or milder profile.
Add cayenne pepper, chili powder, or sliced jalapenos to this chili bake for an extra kick of heat.
Once completely cooled, this chili cheese hash brown bake can be stored in an airtight container in the fridge for 3-5 days or in the freezer for up to 3 months.
Reheat leftovers in the microwave or oven, first thawing the casserole overnight in the fridge if frozen.
