Cafeteria Noodles have become a TikTok sensation. While there are many variations in circulation, I’ve opted for simple ingredients consisting of egg noodles, a creamy sauce, black pepper, and a sprinkling of chopped parsley!

Recipe Notes:

  • It’s important to be mindful of the saltiness of the ingredients. Many of these recipes call for a full tablespoon of chicken bouillon granules or paste in addition to chicken stock. However, if the chicken stock or broth you’re using is already salty, the additional bouillon could make the dish too salty. To avoid this, you can adjust the amount of bouillon used based on the saltiness of your broth/stock. Additionally, if you’re using salted butter, you may want to use less bouillon. In my experience, 1 teaspoon of bouillon is a good amount to use.
  • I also recommend using a Dutch Oven when making these recipes. While it may take longer to heat up and bring the broth to a boil, it retains heat well once removed from the heat, which allows the noodles to cook through and absorb all the delicious flavors.
  • Overall, this is a very simple and easy-to-prepare meal. Add ingredients like peas, diced rotisserie chicken, broccoli, and spinach to make it a one-pot meal.
  • When reheating leftovers, add some broth or water to loosen the noodles, which would have absorbed sauce in storage.

Ingredients
 

  • 6 cups chicken stock or chicken broth
  • 1 teaspoon bouillon granules or bouillon paste* – see notes
  • 12 oz. bag of wide egg noodles
  • 21 oz. cans cream of chicken soup 2 (10.5 oz) cans
  • ½ cup unsalted butter
  • Fresh cracked black pepper, to taste
  • Freshly chopped parsley for garnish

Instructions

  • Bring chicken broth and bouillon to a boil over medium-high heat in a large skillet or pot.
  • Add egg noodles and return the liquid to a boil. Simmer for 1-2 minutes. Stir in the cream of chicken soup and, again, return the mixture a boil, simmering 1-2 minutes.
  • Stir in the butter. Cover the pot with a lid and remove from heat.
  • Leave the noodles to sit for 20 minutes, until most of the liquid has been absorbed and the noodles are soft and creamy.

    I made this as a one dish meal, by adding a can of peas, and canned chicken breast, plus some garlic and onion, and it was delicious. Easy quick dinner!
