Air Fryer Pumpkin Donuts

If you’ve been following The Rockstar Mommy for a while then you’ll have noticed that I’m quite keen on my air fryer and for good reason – it’s a super healthy alternative to traditional frying, is incredibly quick and you don’t have the mess of hot oil coating all surfaces of your kitchen!

But what do I love more than my air fryer? A good ol’ donut! Since we’re heading rapidly into the cooler months, I’ve already got pumpkin on the brain. I knew I just HAD to try some Air Fryer Pumpkin Donuts!

It’s all kinds of pumpkin pie goodness in donut form. Once fried, I added a melted butter and sugar topping with pumpkin pie spice (obviously!).

The results were amazing and now I don’t think I’ll pass pumpkin season without making at least a few batches of these Air Fryer Pumpkin Donuts!

Recipe Notes:

  • If you don’t like using vegetable oil then feel free to use coconut oil when lightly brushing the donut dough for placing in the air fryer basket. 
  • Don’t overcrowd your air fryer basket with the donuts otherwise they won’t fry evenly. Rather fry them in batches if necessary.
  • You can easily double the ingredient quantities if you’d like to make more pumpkin donuts. This will obviously mean additional batch cooking but it’s so worth it, especially if catering for a party.   
  • I’ve kept the donut topping very simple with butter, sugar and pumpkin spice – it’s totally addictive. If you’re one of those people who loves glazed donuts then go right ahead and add a glaze, sprinkles or even dip them into some melted chocolate!
HOW SHOULD I STORE AIR FRYER PUMPKIN DONUTS?

These air fryer pumpkin donuts are best enjoyed as soon as they’re made, although you can store them in an airtight container at room temperature for 2 days or for up to a week if refrigerated.

CAN I FREEZE THESE AIR FRYER DONUTS?

Donuts generally freeze well for up to 3 months although I always opt to leave any glazed or sugar coating off if I intend making these ahead of time to store in the freezer.

To thaw, simply place them in the refrigerator or on the countertop. You can reheat your donuts by placing a damp paper towel over them and microwaving them for about 30 seconds. It’s at this stage that I’d add the sugar coating.

CAN I MAKE PUMPKIN DONUT BITES OR A COMBINATION FROM THIS RECIPE?

Absolutely! If you use the same quantity of dough, you will probably end up with fewer regular-sized donuts with accompanying donut bites or you could make a few batches for greater number of servings – it’s totally up to you.

If you’re interested in making a combination of regular size donuts with donuts bites then roll each piece of dough into balls instead of tubes and then cut the centre out using a 1-inch pastry cutter. The cut out centres will now be your pumpkin donut bites!
Go ahead and fry your larger donuts followed by your donut bites. They both require the same amount of air frying time which makes it super convenient for you!

Air Fryer Pumpkin Donuts

  1. Whisk together the flour, sugar, baking powder, baking soda, pumpkin pie spice, and salt.flour, sugar, baking powder, baking soda, pumpkin pie spice, and salt in a bowl
  2. Cut in the butter until the mixture resembles coarse sand.Cutting in the butter into mixture
  3. Add the pumpkin puree and ¼ cup of milk. Stir until the dough begins to come together. If the mixture is too dry and crumbly, add more milk one tablespoon at a time.pumpkin puree and milk being added to bowl
  4. Transfer the dough to a lightly floured surface and knead until smooth. Separate the dough into 12 equal pieces. Roll each piece of dough into a long tube and connect the ends to form a circle.forming dount shape out of dough
  5. Preheat the air fryer to 375 degrees F.
  6. Place the donuts in the air fryer basket, making sure they’re not touching. Brush each donut with vegetable oil.brushing donuts

  8. Transfer the cooked donuts to a wire cooling rack to cool.

Ingredients
 

  • 1 ¾ cups flour
  • ¼ c sugar
  • 3 teaspoons baking powder
  • 1 ½ teaspoons baking soda
