Valentine’s Day Strawberry Fudge
This Strawberry Valentine’s Day Fudge recipe calls for minimal ingredients that pack on the scrumptious strawberry flavor with red and white swirls of melted candy melts mixed with buttercream frosting!

RECIPE TIPS
- Hardened fudge that falls apart when cutting is a sign that too much chocolate was used. Next time reduce the amount of chocolate but don’t throw this first batch away – it’s still going to taste super delicious. It just may not be as soft or pretty as you’d hoped it to be.
- Fudge that hasn’t set after the allocated chilling time means that not enough chocolate was used. You’ll either need to increase the quantity of chocolate or decrease the quantity of frosting next time to make this fudge.
- It’s completely normal for the chocolate to seize slightly once the frosting is added. All you really need is for the mixture to be pourable to keep stirring and it should all be fine.
- Make sure that you don’t add the strawberry extract directly to the chocolate or the chocolate will seize and won’t be usable.
- If strawberry candy melts are not available to you, the extract will still add plenty of flavor so it isn’t a deal breaker. Pink candy melts could definitely be used instead.
- White chocolate chips are a good alternative to candy melts but you will need to add oil based food dye. Don’t use water-based dye as it ruins the chocolate just like adding extract directly to it ruins it.

How to Make Valentine’s Day Strawberry Fudge
- Place the red candy melts in a microwave-safe bowl and heat on high, in the microwave, for 2-3 minutes or until smooth when stirred. Stop every 15-30 seconds to stir during the melting process to ensure the candy melts don’t overcook.
- Follow step one for the pink candy melts, keeping the two colors separated.
- Remove the lid and film from the frosting and place it in the microwave for 45 seconds to 1 minute, or until fully melted and smooth. Set aside ½ a teaspoon of uncooked frosting if using the heart sprinkles.
- Add the extract to the frosting and stir well.
- Place half of the frosting in with the red candy melts and the other half with the pink candy melts. Stir each color vigorously until fully mixed.
- Line your pan with parchment paper, making sure to leave some overhang.
- Alternate pouring in the two colors in random spots, pausing to tap the pan in between so it evens out and removes bubbles.
- Once all your chocolate mixtures have been poured in and evened out, sprinkle the top of the fudge with as many Valentine’s themed non-pareils as you like.
- Place in the fridge to chill for 2 hours or until hardened.
- If desired, use the set aside frosting and place a dab on the back of a heart sprinkle, and press it into the middle of each fudge square you cut for a cute addition! Enjoy!
HOW SHOULD I STORE VALENTINE’S FUDGE?
- Leftover decorated fudge can be stored in an airtight container at room temperature or in the refrigerator for up to one month.
- You can also freeze your fudge by wrapping the individual pieces in wax paper and seal it in either in a zip lock bag or an airtight container which should last for up to 6 months.
- Whether you choose to refrigerate or freeze your fudge, always bring it to room temperature first before serving.
WHAT VARIATIONS CAN I MAKE TO THIS FUDGE?
- Change the candy melt colors to create a totally different. This would be great for different holidays such as green and white for St Patrick’s Day.
- If you don’t enjoy strawberry extract, consider using vanilla instead. If making this for St Patrick’s you may want to use a mint extract.
- Decorate the Valentine’s fudge with your favorite sprinkles that may be different from what I’ve used in this recipe. Pretty sanding sugar is also an option.
