How to Make Three Cheese Cauliflower Rice
- Rice cauliflower in a food processor, and pour into a large skillet with ⅓ cup water. Cook covered over medium/high heat for 15 minutes.
- Add in cheddar, cream cheese, and smoked gouda, and cook for an additional 15 minutes, stirring well.
- Serve warm and sprinkle with pepper if desired.
HOW SHOULD I PREPARE CAULIFLOWER FOR THIS RECIPE?
- You can buy pre-cut and bagged cauliflower rice from the fresh produce section in stores. This is a great time saver if you need to plan ahead. Be cautious though because riced cauliflower can spoil quite quickly and you will need to examine the bag for smell and discoloration.
- Another option is to use frozen cauliflower rice although it can release quite a bit of liquid when cooked.
- For best results, prepare a head of fresh cauliflower by washing it well before adding the florets to a food processor until you achieve rice-like texture. Do not over pulse otherwise you’ll end up with a soggy mess. You can also grate the cauliflower on the large cutter side of a box grater. This works really well too.
