Three Cheese Cauliflower Rice is oh-so creamy and decadently cheesy! Every bite is better than the last which I know may sound strange to some when it comes to all-to-often bland and boring cauliflower! You’re just going to have to try it for yourself!

This cheesy cauliflower rice is a very simple recipe with minimal ingredients required. You can also enjoy it as a side dish or as a filling meal by itself.

RECIPE TIPS

  • Feel free to add in some dried herbs or veggies such as corn and peas for a slight variation to this recipe. 
  • I’ve found that even the picky eaters love this dish and I can’t help but think that it’s all that gooey cheese that’s made all the difference!
  • For a kick of heat to this dish, consider adding in some cayenne pepper or even some finely sliced jalapeno peppers. 
  • Chopped spring onion or chives is a delicious garnish to add to each serving. 

How to Make Three Cheese Cauliflower Rice

  1. Rice cauliflower in a food processor, and pour into a large skillet with ⅓ cup water. Cook covered over medium/high heat for 15 minutes. cauliflower rice in food processor
  2. Add in cheddar, cream cheese, and smoked gouda, and cook for an additional 15 minutes, stirring well. cheeses and seasoning added to pan

HOW SHOULD I PREPARE CAULIFLOWER FOR THIS RECIPE?

  • You can buy pre-cut and bagged cauliflower rice from the fresh produce section in stores. This is a great time saver if you need to plan ahead. Be cautious though because riced cauliflower can spoil quite quickly and you will need to examine the bag for smell and discoloration. 
  • Another option is to use frozen cauliflower rice although it can release quite a bit of liquid when cooked. 
  • For best results, prepare a head of fresh cauliflower by washing it well before adding the florets to a food processor until you achieve rice-like texture. Do not over pulse otherwise you’ll end up with a soggy mess. You can also grate the cauliflower on the large cutter side of a box grater. This works really well too.

HOW SHOULD I STORE THREE CHEESE CAULIFLOWER RICE?

  • Leftover Three Cheese Cauliflower Rice can be stored in an airtight container in the refrigerator for up to 3-4 days. 
  • You also have the option of freezing your three cheese cauliflower rice for up to 3 months. Thaw in the refrigerator and reheat in a pan, adding a small amount of water or milk to loosen it up until heated through.

  • cup cream cheese
  • 1 cup cheddar cheese

    Yummy 😋 I added a pinch of cayenne pepper and Gruyère cheese as well. I also put it in a casserole dish and topped it with mozzarella cheese which is the only cheese that gives you that stretch like pizza, and I cooked frozen cauliflower rice in the microwave. Sooo good 😄
