How to Make Beer Brats

Now, there are two good ways to cook bratwurst. You can stew them in beer – preferably with onions –  or you can cook them up on the grill until they’re crisp and brown. What makes this Beer Brats recipe is that it uses both methods, one right after the other.

First, you layer the brats with sliced onion in a pan of amber ale and let the whole pan simmer on top of the grill, so the sausages soak up that light, malty flavor. Then, right before they’re done, you pull them out of the pan and lay them on the grill for just a few minutes to give them a nice, crisp outer coating.

Plump, crisp, and bursting with German flavor, these Beer Brats are delicious in a crusty bun with your favorite sausage topping – ketchup, mustard, relish, mayo, sauerkraut, or dill pickle. Or all of the above!

  • I like to use an Amber Ale style beer, but any of your favorite beers will work well with this recipe.
  • Our favorite topping to use with our brats are ketchup, mustard, relish, sauerkraut and grilled onions.

How to Make Beer Brats

  1. Preheat oven or grill to 400 degrees F. Slice onions and layer in the bottom of a deep sided baking pan.
  2. Place uncooked brats on top of onions.brats and sliced onion in pan
  3. Add beer to the pan, enough to cover the brats. Add any additional onion slices to the top of brats.pouring beer over brats
  4. Cover pan and place on a 400F degree grill/oven.beer bats in foil pan on grill
  5. Bring to a boil and reduce heat and let simmer for 15 minutes.
  6. Pull brats from pan and place on grill grates, grill for 5-10 minutes to crisp the bratwurst. If cooking indoor, pan fry instead. brats on a grill
  7. Once crisped, pull from the grill and let rest for 3-5 minutes. 
  8. Serve with toppings of your choice.Beer Brats
