Heirloom Tomatoes Salad

This Heirloom Tomatoes Salad is a beautiful side salad that is bursting with fresh tomato flavor and vibrant color. This recipe uses simple seasoning and includes creamy feta cheese sprinkled throughout for extra body and deliciousness!

Recipe Notes:

  • Check the tomatoes for any bruises and blemishes. If the skin has split since you’ve purchased them then use them immediately otherwise don’t buy any tomatoes that are already split. 
  • There are no rules as to how these tomatoes should be cut. Chop them into pieces, slice them or cut them into wedges. A suggestion is to cut the large tomatoes into wedges along the vertical line and cut the smaller tomatoes in half.
  • Use a good quality olive oil or this salad. I suggest Italian Nocellara extra virgin olive oil because of its interesting and complimentary flavor.
  • To intensify the robustness of the overall flavors, let the salad sit for at least 20 minutes. This will allow the flavors of all the ingredients to blend together and it will be even more delicious than when served immediately.
  • If you let the salad sit in the fridge let it get to room temperature before serving since Heirloom tomatoes taste best at room temperature.
  • Improvise and be inventive with this salad by using it as a base to add other interesting ingredients. Nuts and seeds add a crunchy texture. Avocado adds a creamy dimension and fruits like peaches go really well with heirloom tomatoes.
  • Store leftover Heirloom tomatoes salad in an airtight container for up to 2 days in the refrigerator. 
How can I tell if my tomatoes are ripe enough?

There are a few indicators that will show how ripe your tomatoes are. They should feel firm to the touch but will give a little when put under some pressure. Ripe tomatoes should also feel heavy for their size. You can use green heirloom tomatoes mixed in with other ripe tomatoes but remember that green tomatoes will be more acidic than their ripe counterparts.

Ingredients
 

  • 1 1/2 lbs Heirloom Tomatoes
  • 1 cup Grape or Cherry Tomatoes
  • 1/2 Tablespoon Olive Oil
  • 1/2 Tablespoon Balsamic Vinegar
  • Salt and Pepper to taste
  • 6-8 leaves Basil chopped
  • 2-3 Tablespoons Parsley chopped
  • 1/4 cup Crumbled Feta Cheese

Instructions
