Substitutions:

Cheese: Use sharp cheddar, mild cheddar, Colby Jack, Monterey Jack, or a Mexican cheese blend.
Bell peppers: Replace the green pepper with red, yellow, or orange bell pepper for a sweeter flavor.
Beans: Pinto beans can be used instead of black beans.
Jalapeños: Substitute pickled jalapeños for a tangier flavor, or leave them out for a mild salad.
Bacon: Turkey bacon can be used if preferred. Cook it until crisp before adding it to the salad.
Pickles: Try dill pickles for a tangy bite or bread-and-butter pickles for a slightly sweeter flavor.
Corn: Fresh cooked corn or thawed frozen corn can replace the canned whole kernel corn.
Dressing: Add a splash of pickle juice to the ranch dressing for additional tangy flavor.

Can I make cornbread salad ahead of time?

Yes! You can prep the ingredients a day ahead and store them separately. For the best texture, assemble the salad just before serving.

Is this cornbread salad spicy?

Not very. Removing the seeds from the jalapeños keeps the heat mild. Leave them out completely if you prefer.

Ingredient Notes

  • Cornbread: Forms the base of the salad and adds a lightly sweet flavor and crumbly texture. You can use your favorite homemade cornbread recipe or prepared cornbread.
  • Red onion: Adds fresh flavor, color, and a little crunch. Slice a few rings to save for decorating the top.
  • Green pepper: Gives the salad a crisp texture and fresh flavor.
  • Tomato: Adds juicy flavor and bright color throughout the layers.
  • Whole kernel corn: Brings a touch of sweetness that pairs perfectly with the cornbread.
  • Bacon: Cooked until crisp for a smoky, savory crunch in every serving.
  • Sour cream: Creates a rich and creamy base for the ranch dressing.
  • Mayonnaise: Makes the dressing smooth and easy to spread between the layers.
  • Dry ranch dip mix: Adds plenty of herby ranch flavor without needing additional seasonings.
  • Shredded cheese: Adds cheesy flavor between each layer. Cheddar cheese is a great choice.
  • Fresh jalapeños: Add fresh flavor and a little heat. Removing the seeds helps keep the spice level mild.
  • Black beans: Make the salad heartier while adding color and texture.
  • Pickles: Add a tangy crunch that balances the creamy dressing and sweet cornbread.
