Cheesy Salsa Chicken
You know that panicky feeling when it is 5:47 p.m. and you have absolutely nothing planned for dinner? This is the meal that fixes that. This cheesy salsa chicken is one of those easy dinner recipes that comes together in just 20 minutes and delivers so much flavor your family will think you spent hours in the kitchen.

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven, first covered with aluminum foil, and then uncover for a few minutes just to allow the cheesy topping to bubble.
Eating uncooked chicken is unsafe. To ensure that your chicken is adequately cooked, insert a food thermometer into the thickest section. It should register 165F for the chicken to be safe to eat.
Feel free to use your favorite salsa, whether that’s store-bought or homemade. Trying different salsa for this recipe is a great way to make the same meal for your family without it becoming boring.

Ingredient Notes

- chicken breasts: The star of the dish; slice them into thin halves so they cook quickly and evenly.
- taco seasoning: A savory spice blend that gives the chicken a little bit of heat and tons of flavor; use your favorite brand. (Try This Taco Seasoning)
- oil: Helps the chicken sear beautifully in the pan; olive oil or any neutral cooking oil works great.
- salsa: Choose a thick, chunky salsa for the best results — mild, medium, or spicy depending on your family’s taste.
- shredded cheddar cheese – Melts over the top for that irresistible, gooey finish; grab a block and shred it yourself or use pre-shredded cheese in a pinch.
