Candied Roasted Carrots
Candied Roasted Carrots are sweet with warm spices of fall, roasted to perfection and certainly one of the most delicious ways to prepare this side dish!
I must say that roasting vegetables is one of my favorite ways to make them as it tends to draw out the sweetness while infusing them with the flavors you choose to season with. It’s also a guaranteed way for getting my kids to eat all the vegetables on their plates which is always a big win for any parent!

The brown sugar and butter caramelizes the carrots making them taste amazing and I also love how they fit right in with the color scheme of fall, making these candied roasted carrots a beloved dish for Thanksgiving (although they are also great for any celebration or weeknight dinners!).
Recipe Notes:
- If you have any leftover roasted carrots then add them to a homemade soup. They are great for making soups!
- If you make use of whole carrots, make sure to wash and peel them but you can also use baby carrots.
- Although this is an excellent recipe for Thanksgiving, it also works great for so many other holidays and summer BBQs.
Candied Roasted Carrots
- Preheat oven to 375 degrees F.
- In an ovenproof dish, toss the carrots with the melted butter, then season with the brown sugar, salt, cinnamon, nutmeg and thyme.
- Bake carrots for 25-30 minutes, stirring approximately every 10 minutes, until cooked to your personal preference.

Ingredients
- 3 cups carrots sliced
- 1/3 cup butter melted
- 1/3 cup brown sugar
- 1 teaspoon salt to taste
- 2 teaspoons cinnamon
- 1/2 teaspoon nutmeg
- 1-2 teaspoons dried thyme
Instructions
- Preheat oven to 375F
