SHOULD I USE METAL OR BAMBOO SKEWERS?
Both metal and bamboo skewers can be used for this recipe. If you opt for bamboo or wooden skewers, soak them first in water for a minimum of 20 minutes before assembling the ingredients and cooking on the grill.
Soaking them first will prevent the wooden skewers from burning and disintegrating on the grill.

The benefit of metal skewers is that they’re reusable but handle them with care as they can get very hot from the grill’s heat.
Whether you use metal or wooden skewers, leaving a gap of about 2-3 inches at the bottom is best to give you enough room to grip the skewer for easy flipping.
Sirloin steak is recommended for this recipe because it is leaner meat that is really suitable for grilling. It will not cause the grill to flame as excess fat drips off it, and the meat and vegetables will not burn. Sirloin also holds its form on a skewer during the cooking process.

- Before serving, wrap the fajitas in foil to let them rest for 2 – 3 minutes. Resting enhances the flavors and keeps juices locked in for tenderness.
- Reheat leftovers on the grill for no more than a minute or two, so they do not dry out or burn. Wrapping in foil before heating is another option.
- Serve with dips, salads, or even tortillas, on or off the skewer.

- Prepare the skewers by alternating the vegetables and meat.
- Prepare the grill to medium high heat. Carefully oil the grill grates.
- Place the skewers on the prepared grill and cook, covered for 10 minutes or until the beef has reached desired doneness, flipping the skewers halfway through the cook time.
- Serve alone or with flour tortillas and the toppings for fajitas.
