TIPS FOR MAKING THIS ST PATRICK’S DAY FRUIT PLATTER
- You can easily make any size platter you wish by simply adding more ingredients or using less than what has been listed in this recipe.
- Glam up this platter for a party with a chocolate fondant and skewers for people to dip the fruit pieces and marshmallows into.
- Write a cute short phrase with a food marker on the marshmallows as extra fun for the kids!
If you use any fruit slices that are likely to turn brown such as apples or bananas, you can spray them lightly (using a food-grade spray bottle) with some lemon juice on either side which will help prevent the brown discoloration.
St Patrick’s Day Fruit Platter
- Wash and dry the fruit. Cut into bite-size pieces if desired.
- Arrange the fruit beginning with the strawberries along the edge of the plate. Continue adding the fruit, row by row, in the order listed. If the fruit slides towards the center, gently push the fruit back towards the edge of the plate and continue adding rows until the rainbow is complete.
- Add a small bowl on each side of the rainbow with one holding marshmallows and the other holding the Rolos candies. If preferred, place the marshmallows and candies directly on the plate. Serve with bamboo skewers if desired to allow guests to create their own rainbow kabob.
HOW CAN I VARY THIS ST PATRICK’S DAY FRUIT PLATTER?
- While the fruit rainbow has been used with those sliced fruits listed in this recipe, there’s nothing stopping you from making the rainbow from different fruit of the same or similar colors.
- The marshmallow cloud can be replaced with plain popcorn or a bowl of Greek yogurt and the Rolo candies can be replaced with another gold-covered candy or even slices of banana if you are trying to keep the platter fruit-only.
WHAT CAN I DO WITH LEFTOVER FRUIT FROM THE PLATTER?
- Most sliced fruit will last up to 3-5 days in the refrigerator if stored in an airtight container. You could easily use up any leftover fruit slices in breakfast muesli or as a refreshing snack the following days.
- Alternatively, blend your leftover fruit to make a smoothie mix and store it in your freezer for easy smoothie bases later on.
