Loaded BBQ Totchos
Totchos aka Tater Tot Nachos, offer a fun and delicious twist to the classic nachos. The tater tots in these BBQ Totchos create a crispy potato foundation (much like your nachos would) topped with BBQ seasoned shredded pork, baked beans, shredded cheese and sticky BBQ sauce!
They make the perfect snack or appetizer for game day or to welcome the start of BBQ season. Who would have guessed that you could make such a awesome dish from these little frozen potatoes, right?!
And while I love anything BBQ, these totchos can easily be varied with toppings of your choice. Make a batch of these for your next party and watch them fly off the table!

RECIPE TIPS
- Serve your totchos with sour cream and guacamole.
- To keep your totchos warm for eating, make sure to add your toppings quickly and as soon as the tater tots are done baking.
- If you have any leftover toppings, keep them for other meals during the week such as tacos or other Mexican-inspired dishes.
How to make Loaded BBQ Totchos
- Place the pork shoulder in a slow cooker. Add the water and season with BBQ seasoning. Cook the meat on low for 8 hours or high for four hours. When the meat is cooked through, remove it from the pot and shred it. Return to the pot and stir to combine the meat and seasoning.
- When ready to prepare the totchoes, preheat the oven to 425 degrees. Spray a large baking sheet with nonstick cooking spray and spread the tater tots in an even layer on the sheet. Spray the tots with nonstick cooking spray and season with salt. Bake in the preheated oven for 30 minutes, until crispy.
- Remove the tots from the oven and spread the meat over the top. Top the meat with baked beans and shredded cheese and return to the oven to bake for 10 minutes, until cheese is melted.
- Before serving, top with BBQ sauce and green onions.

- To make your totchos vegetarian, simply omit meat and increase your vegetarian toppings

- Yes, you can! The trick to making your totchos quickly and easily is to prep certain ingredients a day or two ahead of assembling and enjoying.
The ingredients you can prep 1-2 days prior to baking your tater tots include:
- Shredding cheese
- Making your pulled pork in the slow cooker
- Draining and rinsing your beans
- Slicing your onions and any other toppings you plan on adding
- Make sure to keep your ingredients in separate containers till you assemble your tatchos.
