Recipe Notes:
- If you have any leftover ingredients when making these Antipasto Skewers, consider using them in another antipasto recipe such as these Antipasti Bites.
- If using basil leaves for this recipe is out of budget for you (they can be expensive!) then consider using baby spinach instead. Alternatively, make your basil leaves stretch for you by cutting them in half.
- Another tasty idea is to drizzle these skewers with a small amount of balsamic glaze just prior to serving.
- Easily change up the ingredients used in this recipe by using your favorite antipasto ingredients.
- Double the ingredient quantities if you are feeding a larger crowd. Similarly, halve the ingredients if needed.
If marinated mozzarella balls are unavailable, you can easily marinate them yourself. Add small mozzarella balls to a small bowl and pour 2-4 tablespoons of Italian dressing over them. Allow them to marinate for 2-3 hours, or even better, overnight.
Yes, you can prepare these skewers in advance. After assembling the skewers, place them on a serving tray, cover, and refrigerate. They can be made up to 24 hours before serving.
Yes, after marinating, it’s advisable to drain and discard the marinade from the mozzarella and tortellini. This helps to prevent the skewers from being too wet or soggy.
