Ingredients
4chicken breasts
1cupolive oil
2limes zested and juiced
2garlic clovesminced
⅛cupchopped fresh cilantro
¼teaspoonsalt
¼teaspoonpepper
Garnishes- extra cilantroslices of lime
Instructions
Directions for the marinade:
In a small bowl, mix together the olive oil, lime zest, lime juice, garlic, cilantro, salt and pepper. Set aside.
Using a meat tenderizer, pound the chicken breasts until they are even in thickness. Place the chicken in a 9x13 dish. Pour the marinade over the chicken. Cover and refrigerate for 30 minutes, turning once halfway through.
Grilling instructions:
Prepare your grill for medium-high direct heat. Place the chicken on the grill, and cook for 6-8 minutes turning once halfway through cooking time. The chicken is done when the internal temperature reads 165 degrees F
When cooked through, remove from heat and let it rest a few minutes before cutting. Serve with extra fresh cilantro and slices of lime to squeeze on top.
