Ingredients
2 ½cupsdry macaroni noodlescooked according to directions, drained
1cupthick sliced deli corned beefdiced
1cupcubed swiss cheese
1cupdrained sauerkraut
1cupdill picklesdiced
¾cupsthousand island dressing
½cupmayonnaise
1tablespoondijon or stone ground mustard
1tablespoonsauerkraut brine from the jar
Optional* salt and pepperto taste
Instructions
Cook the boxed pasta according to package directions. Rinse macaroni under cool water and drain. Set aside to fully cool.
In a small bowl, whisk together the dressing ingredients until well combined.
In a large serving bowl, toss together the cooled pasta, dressing and remaining ingredients. Chill covered for at least an hour before serving. Season with salt and pepper, if desired. When ready to serve, stir and enjoy!
