Slice peaches, and arrange open side up in a baking dish.
Cut together brown sugar, flour, butter, and cinnamon with a pastry cutter or two forks until you have a crumbly texture. Mix in your rolled oats.
Stuff the inside of each peach with a hand full of crumble mixture, and pile high on top of each as well.
Bake at 350 degrees for 20-30 minutes, until golden brown and bubbly.
Serve with a drizzle of honey and a scoop of ice cream.
