Ingredients
2tablespoonsoil or butter
2cupschickenchopped
Salt and pepperto taste
1tablespoonCajun seasoning
3.5cupsdry pastasuch as bowtie/farfalle
1small oniondiced
2stalks celerydiced
1sweet bell pepperdiced
6ouncescream cheesesoftened, as desired
1cupsour cream
1/2cupmilkas desired, optional
1.5cupschicken brothas needed
Instructions
Heat half of the oil in a large skillet over medium heat. Season the chopped chicken with salt, pepper, and half of the Cajun seasoning. Add the chicken to the skillet and cook for 6-8 minutes, or until browned and the internal temperature reaches 165°F. Remove chicken and set aside.
Meanwhile, cook the pasta according to the package directions. Drain, but do not rinse. Set aside. Add the chopped onion, celery, and bell pepper to the skillet, adding more oil if needed.
Cook for about 6 minutes, until the onion is translucent and the vegetables are tender. Transfer vegetables to a bowl.
Wipe out the skillet and add the chicken broth. Bring to a simmer, then stir in the sour cream and cream cheese. Continue stirring as the cream cheese melts. Add additional broth or milk as needed until the sauce is smooth and coats the back of a spoon.
Season the sauce with the remaining Cajun seasoning, adjusting to taste.
Add the cooked pasta and stir until coated in the sauce.
Return the chicken and vegetables to the skillet and stir until everything is coated and heated through.
