- 3 cups riced cauliflower
- ⅓ cup water
- ⅓ cup cream cheese
- 1 cup cheddar cheese
- ½ cup smoked Gouda cheese
- Pepper to taste
Rice cauliflower in a food processor, and pour into a large skillet with ⅓ cup water. Cook covered over medium/high heat for 15 minutes.
Add in cheddar, cream cheese, and smoked gouda, and cook for an additional 15 minutes, stirring well.
Serve warm and sprinkle with pepper if desired.
