These Loaded BBQ Totchos have a crispy potato foundation topped with BBQ pork, baked beans, shredded cheese and sticky BBQ sauce!

2poundspork shoulder
1cupwater
1tablespoonBBQ seasoning
1 32-ouncebag frozen tater tots
1 28-ouncecan baked beans
2cupsshredded Monterrey jack cheese
1cupBBQ sauce
Salt
Green onion for garnish
Instructions
Place the pork shoulder in a slow cooker. Add the water and season with BBQ seasoning. Cook the meat on low for 8 hours or high for four hours. When the meat is cooked through, remove it from the pot and shred it. Return to the pot and stir to combine the meat and seasoning.
When ready to prepare the totchoes, preheat the oven to 425 degrees. Spray a large baking sheet with nonstick cooking spray and spread the tater tots in an even layer on the sheet. Spray the tots with nonstick cooking spray and season with salt. Bake in the preheated oven for 30 minutes, until crispy.
Remove the tots from the oven and spread the meat over the top. Top the meat with baked beans and shredded cheese and return to the oven to bake for 10 minutes, until cheese is melted.
Before serving, top with BBQ sauce and green onions.
