Bang Bang Cauliflower Bites

- 1 head cauliflower cut into bite size pieces
- 3 cups panko bread crumbs
- 3 large eggs
Ingredients for bang bang sauce:
- 4 tablespoons sweet chili sauce
- 4 teaspoons hot sauce like sriracha
- ½ cup mayo
- 2 tablespoons honey
- Garnish with 2 tablespoons fresh parsley chopped
Preheat the oven to 400 degrees fahrenheit. Line a large baking sheet with parchment paper.
Crack eggs into a small bowl, whisk eggs well.
Dip cauliflower pieces into eggs and then roll into panko crumbs until well coated.
Place breaded cauliflower on a prepared lined baking sheet. Repeat until the cauliflower is all coated.
Bake for 10 minutes, rotate cauliflower and bake for another 10 minutes. Cauliflower is done when bread crumbs are golden and crunchy.
While the cauliflower is baking, add all the ingredients for the bang bang sauce to a small bowl and whisk until well combined.
When cauliflower is done baking, drizzle bang bang sauce over the cauliflower. Use remaining sauce for dipping.
Garnish with fresh parsley. Enjoy!
