Ingredients
2boneless skinless chicken breastscubed
2tablespoonscornstarch
Salt and black pepperto taste
1tablespoonvegetable oilpeanut or canola oil can be substituted
1tablespoonsesame oil
12ozbag fresh broccoli florets
2clovesgarlicminced
1cupshredded carrots
1red bell pepperseeded and sliced
1sweet onionhalved and sliced
½cupunsalted cashews
1tablespoonrice wine vinegar
3tablespoonshoney
2tablespoonsreduced-sodium soy sauce
1tablespoonchili garlic sauce
Instructions
Mix the cornstarch, salt and black pepper.
Toss the chicken in the cornstarch until evenly coated. In a large skillet or wok over medium heat, warm the oil and sesame oil until hot. Add the chicken and brown on all sides.
To the skillet, add the vegetables. Cook for 4 to 6 minutes or until the vegetables are beginning to soften.
Add the cashews to the skillet.
In a small bowl, whisk together the vinegar, honey, soy sauce, and chili garlic sauce. Pour the mixture over the stirfry and toss to coat. Serve immediately.
