Heirloom Tomatoes Salad

Ingredients

  • 1 1/2 lbs Heirloom Tomatoes
  • 1 cup Grape or Cherry Tomatoes
  • 1/2 Tablespoon Olive Oil
  • 1/2 Tablespoon Balsamic Vinegar
  • Salt and Pepper to taste
  • 6-8 leaves Basil chopped
  • 2-3 Tablespoons Parsley chopped
  • 1/4 cup Crumbled Feta Cheese

Instructions

  • Chop up the tomatoes and place in a bowl. I personally liked the look of chopping them in a variety of different ways, but you can chop them all to the same size and shape, if desired.
  • Drizzle the tomatoes with olive oil and balsamic vinegar. Toss to coat.
  • Season to personal taste with salt and pepper, then add the chopped parsley and basil.
  • Sprinkle with feta cheese and serve immediately.
  • If desired, serve on a bed of mixed greens.
